  I think I did that once, and you may get a warning of "Are you sure you want to combine/evolve it?", but most likely the skill and the giant will be removed.

  If evolving you need two same cards together, both lv.30 and +5 to get that unit's next star unit. Combine will give you a new unit of an extra star but the new unit is random, I think

  Sadly enough from what I'm aware of each combine is out of luck. But I'll let you know if I come across anything

  To combine units you need them both to be level 30 and enhance level 5.
