You can get crops out of season by spinning the reward spinner at the Game Hut and winning them. You get to spin the wheel each time you check in to get your daily reward. You can also spin the wheel as often as once every hour if you're willing to watch an ad video each time. You can also get out of season crops from trading.

Unfortunately there's no easy way to figure this out, you'll get a message on the screen when the season changes and just have to remember. If you can figure out what crops are what season that'll inform you. Winter easy bc there's snow on the ground.

you have to wait for the seasons to change, different seasons mean different crops. Also upgrading your fields will let you grow a wider range of vegetables

To get lettuce you will have to wait until you are level 40 and have a level 4 campfire. Then you will have to build poly tunnels, where you will be able to grow lettuce, tomatoes, and other crops you cant grow on the fields.

Potatoes and salad leaves grow on different seasons. So does wheat. I also believe you will have more crops avsilable to grow at a higher level. You can find wild garlic, although I dont think you can grow it.
